
Quinoa Apple Salad
A satisfying and healthy great tasting salad
What better food to eat when you are hungry than a Quinoa Apple Salad. Don't be fooled by this dish thinking it won't fill you up. With the perfect blend of ingredients this salad will keep you coming back for more. Enjoy.

Here's what you will need:

1 Cup dry white quinoa, rinsed
2 Cups water
1 Cup shredded/ chopped finely fresh green cabbage
1 diced/chopped sweet white onion
2-4 grated / shredded carrots (about 1 cup)
1/4 cup fresh parsley, flat leaf / Italian, finely chopped
1-2 cloves minced garlic
2-4 Tablespoons Unfiltered Apple Cider Vinegar
3-4 Tablespoons Vegetable broth
1-2 Cups chopped apples
(I use sweet varieties from local farm market, gala-like,
pink lady or honeycrisp; use whatever variety you like)

Variations: Consider using red quinoa, red onion, and tart green apples

How to make Quinoa Apple Salad:
Step 1
Rinse quinoa well.
Combine Quinoa and water in medium pot and bring to a boil.

Step 2
Reduce heat to a medium simmer, cover, and cook until the water is absorbed, about 10 - 13 minutes
Notes:
This mix is forgiving; use more(or less) cabbage, carrots, parsley, garlic or apples to your liking.
Add Apple Cider Vinegar, veggie broth, salt and pepper a little bit at a time, toss and taste to make sure the flavor is to your liking and does not become too strong.
This mixture mellows as it sits and the flavors mingle, and tastes better the day after it is made.
