Healthy Chocolate Chews
A satisfying and healthy chocolate indulgence
These can be considered like adult tootsie-rolls. A healthy, nutrient-packed treat that fuels and satisfies, while providing a healthy dose of magnesium, iron, protein, omega-three fatty acids, and dietary fibers to delight and satisfy children and adults.
Here's what you will need:

- 1/2 cup pumpkin seeds
- 1/4 cup sunflower seeds

- 1/3 cup hemp hearts
- 3/4 cup rolled oats
- 1.5 cups deglet dates

- 1/4 cup cacao powder
- 1/4 tsp sea salt
- 1 tsp vanilla extract
(or 1 tsp vanilla bean powder,
or the scrapings from 2 vanilla beans)
How to make Healthy Chocolate Chews:
Step 1
Add pumpkin and sunflower seeds to a food processor and pulse until ground to a uniform consistency.

Step 2
Add rolled oats and process until ground.

Step 3
Add hemp hearts and process until uniform, scraping down the side of the food processor when necessary.

Step 4
Add dates and process until mixture is broken up but not yet forming a cohesive ball.

Step 5
Add the cacao powder, sea salt, and vanilla bean powder and process. Interrupt processing and scrape down sides as necessary. Continue processing until the ingredients come together into a cohesive, smooth unit with uniform consistency.

Step 6
Once completely blended and formed into a ball in the food processor, use a spoon to scoop approximately one Tablespoon of batter to form each ruffle. Shape/roll between palms to form individual truffles.
