Easy Quinoa & Savory Mushrooms

Ingredients:

about 3 cups sliced / diced cremini (aka baby bella) or white button mushrooms (one small rectangular container commonly found in stores)

1/2 teaspoon tamari

2 Tablespoons water

1 cup quinoa (white, red, black or a mixture)

2.5 cups water

1 teaspoon of Better Than Bouillon or equivalent

What to do:

Place mushrooms, tamari, and 2 Tablespoons water into medium sized pot Stir and cook over medium heat, covered, about 3 minutes Mushrooms will sweat and shrink and should be very moist at this time Add the quinoa, 2.5 Cups of water, and bouillon to the mushrooms Stir to combine and cover bring to a low simmer on medium heat, and set timer for 15 minutes Simmer on medium heat for 15-20 minutes, until all of the liquid has been absorbed You may want to add a bit more water, a few Tablespoons at a time, if you like your quinoa soft. Remove from heat sooner if you prefer a firmer bite. Remove from heat and fluff with a fork Let sit, covered, for about 10 minutes before serving, to increase flavor
