Granola Cereal Snack

A satisfying and healthy cereal snack for any time of the day

Here are some yummy combos suggestions:
- Cherries and almonds
- Cherries and sunflower seeds
- Cherries and pecans

 

You can leave out the dried fruit and add fresh or frozen fruit with milk - very good with blueberries

Here's what you will need:

- 3 Cups rolled oats - old fashioned


- 3 Tablespoons seeds or chopped nuts

(Walnuts, almonds, pumpkin seeds, sunflower seeds, pecans)
    (chop finely and add more if you like.)


- 1 teaspoon cinnamon – or more to taste


- 1/4 teaspoon (or pinch) sea salt

- 1/3 Cup date butter


- 1 teaspoon vanilla extract
    (or other complimentary extract)

Optional ingredients (and very good):
1/2 - 3/4 Cup dried fruit
(dried figs, cherries, raisins,
mangoes, blueberries)

How to make Granola Cereal Snack:

Step 1:

Add pumpkin and sunflower seeds to a food processor and pulse until ground to a uniform consistency.

Step 2: 

Preheat oven to 300 degrees F

Step 3

Combine dry ingredients in one bowl (minus the dried fruit)

 

Step 4:

Combine wet ingredients in a separate bowl
Add the wet mixture to the dry mixture and combine until evenly distributed

 

Step 5:

Spread onto a parchment lined baking sheet
Bake for about 30 minutes, taking out a couple of times to mix it up
(set timer for 10 minutes each time and stir mixture well to redistribute)

 

Step 6:

After 30 minutes, add the dried fruit and bake for another 3-5 minutes. Let cool.

 

Adjust baking time to your preference for softer or crunchier texture.
